Cellar wines

Step back a generation or two and discover aged Burgundies. Great Burgundies were never made to be consumed upon release; it is only after being aged in a cellar that we can have the pleasure of smelling the undergrowth of autumn, the honey from spring and tasting the concentration of warm summer days and cold winter mornings all in the same glass. As Vincent Dauvissat will tell you about his marvellous wines from Chablis – we only really begin to see the terroir after 5 years in bottle, though things get more interesting after 15 years. Or as Jean-Charles Le Bault de la Morinière from Bonneau du Martray will tell you – these wines aren’t made to be opened for atleast 20 years.
